Hamburger Stew

This is a great way to use up leftover veggies.
1 lb ground beef, cooked and drained

2 T. minced/chopped onion (cook w/ beef)

1 regular can diced tomatoes

2 medium potatoes, cooked and diced (can partial cook in micro)

1 small can or ½ can of corn

1 small can tomato sauce + 1 can water

Wash 2 medium potatoes and prick with fork. Cook in microwave until soft. Cool slightly, then peel and cut into small pieces.
Cook ground beef w/ minced onions until brown. Drain any grease. Put in a large sauce pan or pot. Add garlic powder, salt, and pepper to meat. Stir.
Add potatoes, diced tomatoes w/ juice, corn, green beans, bullion, tomato sauce and water. May need to add more water, as needed. Adjust spices to taste. Bring to a boil and then simmer for 15-20 minutes covered. Stirring occasionally. Great with biscuits or cornbread!
