Apple Enchiladas (Kay Hillje)
2-3 cans apple pie filling
1 ½ teaspoon cinnamon
½ teaspoon vanilla
12 flour tortillas
½ cup butter
1 cup white sugar
1 cup brown sugar
1 cup water
Combine apple pie filling, cinnamon, and vanilla in a large bowl. Then put about ¼ cup of the filling on each of the flour tortillas and fold up like a burrito (fold sides then roll up). Place in a large casserole dish.
In a medium saucepan melt the butter, sugars, and water over medium high heat until boiling, stirring constantly. Reduce heat and simmer for 3 minutes. Pour over tortillas. Let set for 30 minutes. Bake at 350* for 35-40 minutes. Serve warm.
