Guacamole (Scott Hillje)

When I first went to Santa Fe, one of the first places my co-workers took me to was Gabriel’s Mexican restaurant, just north of the city. It was an experience everyone enjoyed: taking newcomers to taste the famous Guacamole en molcahete, the taste that Gabriel’s is famous for. Everyone comes in a skeptic (“I hate guacamole”) and ends up finishing the entire bowl! This is our version of that recipe. The secret to this recipe is the fresh ingredients. (Scott Hillje)

Ingredients:

4 fresh ripe avocados

½ lime

1 tsp onions, minced

1 clove garlic, crushed

½ fresh tomato, chopped

½ fresh jalepeño pepper, minced

salt, to taste

1 T. cilantro, chopped (optional)

Scoop avocado into mixing bowl or molcahete. Cut up and mash together using a spoon and fork. Squeeze the lime juice over avocado, add the crushed garlic, onions, jalapeño, tomato, cilantro, and salt. Stir well.
