Zucchini Oatmeal Bread (Carolyn Hillje)

3 eggs
1 ½ cups sugar
1 cup oil
1 T. vanilla
1 cup quick oatmeal
1 t. cinnamon
2 c. flour
1 t. baking soda
½ t. salt
¼ t. baking powder
2 cups grated zucchini
1 cup chopped pecans, optional
Beat together eggs and sugar. Mix in oil and vanilla. Mix dry ingredients together and pour into sugar mixture. Mix well. Stir in zucchini and pecans.
Pour into a large greased loaf pan or two small loaf pans. Bake 30-45 (longer for larger loaf) minutes at 350°F.
For Banana Oatmeal: use ¾ cup sugar, omit cinnamon, and add 2 cups mashed bananas.
