Light-n-Fruity Pie (Mary Jo Tolbert)

1 - 3 oz pkg Jello gelatin, any flavor

2/3 cup boiling water

2 cups ice cubes

1- 8 oz pkg cool whip, thawed

2 cups fruit, optional

9 inch graham cracker crust

Completely dissolve gelatin in boiling water, stirring about 3 minutes. Add ice and stir constantly until gelatin is thickened, about 2-3 minutes. Remove any unmelted ice. Using a whisk, blend in whipped topping. Whisk until smooth. Fold in fruit. Chill to thicken if necessary. Spoon into pie crust. Chill 3 hours.
