Apple Torten (Mary Jo Tolbert)

Place in a large bowl:

2 cups sifted flour

Make a well in center of flour and place in it:

2 egg yolks

1/2 cup sugar

grated rind of 1 lemon

1/4 t. salt

3/4 cup butter (room temp)

Work together with hands until well blended. Press dough into bottom and up sides of 11X8X2 inch pan (or approximately). Dough should be about 1/4 inch thick.

Cut 4-6 cooking apples into 1/2 inch slices. Lay in rows on top of dough. Sprinkle with 3/4-1 cup sugar (depending on sweetness of apples) and 1 t. cinnamon. Dot with butter, if desired. Cover and bake for 15 min at 350° Remove from oven.

Mix and pour over apples:

2 egg yolks, beaten

6 T. cream

Continue baking 30-40 minutes uncovered until crust is golden brown and apples are tender. Serve slightly warm with cream or whipped cream. Serves 10-12.

Note: This cookie type crust can be baked for 15 to 20 minutes in a 400 degree oven and then filled with fruits or other fillings.
