Buttermilk Pie (Betty June Koricanek)

1 c. buttermilk Juice of 1 lemon (optional)

½ c. sugar 1 T. butter

3 T. cornstarch 2 egg yolks

Mix sugar and cornstarch. Gradually, stir in buttermilk. Cook in double boiler on medium heat until thickened. Remove from heat. Add beaten egg yolks, juice and butter. Mix thoroughly. Pour into unbaked 9 inch pie shell and bake 25 minutes at 350 or until firm.
