Carrot Cake (Louise Tatum)

2 eggs 1 t. soda

2/3 c. Wesson oil ½ t. cinnamon

1 c. carrots, grated ½ c. pecans, chopped

1 ½ c. flour ¼ t. salt

1 c. brown sugar 1 t. vanilla

Beat eggs. Add other ingredients and mix well. Bake at 325° for 1 hour.
