Twice Baked Potatoes

Wash two large baking potatoes. Poke small holes in skin with a fork. Bake until soft in microwave (7-9 minutes) or oven (45 minutes-1 hour). Cut potatoes in half, lengthwise. Scoop out insides into a small bowl (save skins), add ¼ cup margarine or butter, salt, pepper, and 1-2 T. of light ranch dressing. (Add salt and pepper to taste) Mash together and mound potatoes back into skins. Sprinkle with grated cheddar cheese. Place under broiler until cheese melts. Optional: Stir in 1 T. minced onion or bacon bits. Serves 4.
