Lemon Poppy Seed Cake (Betty June Koricanek)

3 c. flour 1/2 tsp. baking soda

2 c. sugar 1/2 tsp. baking powder

1/4 c. poppy seed 1/2 tsp salt

1 c. butter 4 tsp. grated lemon peel

1 c. buttermilk 1/2 tsp. vanilla

4 eggs

Glaze:

1 to 2 Tbsp. lemon juice

1 c. powdered sugar

Heat oven to 325 degrees Combine all cake ingredients. Beat at low speed, scraping bowl often, until all ingredients are moistened.

Increase to high speed, scraping bowl often, until smooth (1 to 2 min.) Pour into greased and floured Bundt pan. Bake 55 to 65 min. or until wooden pick inserted in center comes out clean. Cool 10 min; remove from pan. Cool completely. In small bowl stir together powdered sugar and lemon juice until smooth. Drizzle over cake.
