Fluffy Pancakes (Kay Hillje)
These are great! Even reheated. This is a double batch that will feed about 4-6 people.
1 1/2 cup milk
4 T. white vinegar
2 cup all-purpose flour
4 T. sugar
2 t. baking powder
1 t. baking soda
1 t. salt
2 eggs
4 T. melted butter
Combine milk and vinegar in a medium bowl and set aside for 5-10 minutes to "sour". Combine dry ingredients in a large bowl. Whisk eggs and slightly cooled melted butter into sour milk. Pour milk mixture into flour mixture. Mix well, until lumps are gone. Heat large griddle or skillet over medium-high heat. Pour 1/4 cups of batter onto griddle. Cook until bubbles appear on surface. Flip with spatula and cook until browned. Don't push down on pancakes. Butter the pancakes and serve warm with syrup, honey, or fruit.
