Sherried Sweet Potatoes
This is a wonderful way to use sweet potatoes. This recipe is great for the holidays. Your family will love it. (Kay Hillje)
2 large sweet potatoes, peeled and sliced
½ c. low fat margarine, melted
½ c. fructose, sugar, or Splenda
2 t. evaporated skim milk
¼ c. sherry cooking wine or regular sherry
dash of salt
Layer sweet potatoes in a casserole dish. In a small bowl, mix margarine, fructose, milk, sherry, and salt. Pour over sweet potatoes. Cover casserole dish. Cook at 350° for 1 hour. Uncover and cook until liquid is almost gone and edges are light brown. Serves 4.
