Magic Lemon Pie (Mary Jo Tolbert)

In a large bowl, blend together:

1 1/3 c. sweetened condensed milk

½ c. lemon juice

¼ t. lemon extract or grated lemon rind

2 egg yolks

Pour into chilled crumb crust or baked 9 inch pie shell. Beat 2 egg whites until foamy, add 2 T. sugar gradually. Beat until stiff. Spread on top of filling. Bake in 325º for 15 minutes or until light brown. Optional topping: cool whip spread on top of filling.
