Spinach Balls (Anna Mae Laster)

2 (10 oz) packages frozen chopped spinach

3 c. herbed stuffing mix

1 large onion, finely chopped

6 eggs, beaten

¾ c. butter or margarine

½ c. grated Parmesan cheese

1 ½ t. garlic salt

1 to 1 ½ t. pepper

½ t. diced whole thyme

Cook spinach according to package directions; drain. Press between

layers of paper towels to remove excess moisture. Combine spinach and remaining ingredients in a large bowl; stir well. Shape mixture into 3/4-inch balls. Place on lightly greased baking sheets. Bake at 325 for 15 to 20 minutes. Serve immediately. Yield: about 10
