Chicken Bisquit

6 T. margarine

6 T. flour

3 c. milk or chicken stock

3 c. chicken, cooked and cubed

¾ c. peas

¾ c. carrots, cooked and diced

¾ c. celery, cooked and diced

1 t. salt

1 recipe unbaked biscuits

Mix the margarine in a saucepan. Add the flour and stir until blended. Add the milk/chicken stock and cook until thickened. Add the chicken, vegetables and salt and pour into a greased casserole. Cover with biscuits. Bake at 400°F until biscuits are brown. Cheese and parsley may be added to biscuit dough. (I use canned mixed vegetables to save time. I cut the biscuits smaller than usual and I use half milk and half chicken stock instead of one or the other).
