Buttermilk Pancakes (Megan Hillje)

1 c. all-purpose flour
1 T. granulated sugar
1 t. baking powder
¼ t. baking soda
¼ t. salt
1 egg
1 c. buttermilk
2 T. cooking oil
1. Put flour, sugar, baking powder, baking soda, and salt in a mixing bowl. Stir with wooden spoon to mix. Save until step 3.
2. Crack egg into another mixing bowl. Beat with fork until yolk and white are mixed. Add buttermilk and oil to egg. Beat with fork until ingredients are well mixed.
3. Add egg mixture to dry ingredients. Stir with the wooden spoon until dry ingredients are wet (the batter should be somewhat lumpy, not smooth.
