Cherry Cake (Mary Jo Tolbert)
From Mary Jo Tolbert's recipes.
Sift together into bowl:
2 3/4 cups sifted flour
1 3/4 cups sugar
4 T. baking powder
1 t. salt
Add:
2/3 cup shortening
1/3 cup cherry juice
2/3 cup milk
16 marischino cherries, cut into 8ths
Beat vigorously with a spoon for 2 minutes.
Add:
2/3 cup unbeaten egg whites (approximately 5)
Continue beating for 2 more minutes.
Fold in 1/2 cup chopped nuts.
Pour batter into greased and floured pans. Bake layers 30-35 min or larger pan 35-40 minutes at 350°.
