Mamaw's Enchiladas
One of the best recipes I remember from Mamaw (Geneva Hillje) was her unique brand of beef enchiladas. She used to make these when the entire family gathered at their small house in Cotulla, Texas. It was very crowded, but the meal was delicious.

Ingredients:
½ cup butter or margarine
3-4 T. chili powder
4-5 T. flour
1 t. ground cumin
2 t. garlic salt
Velveeta cheese (approximately 5 cubes 1in x 1in)
12 softened corn tortillas
Melt butter. Add flour, chili powder, cumin, and garlic salt. Mix together until smooth. Add 1 quart of water and cook until thickens. Add cubes of Velveeta® to taste. It doesn’t take much.
Beef filling: Mix 2 lbs ground beef, 1 t. garlic salt and 1 t. cumin. Makes 1 dozen enchiladas.
