New Orleans Pasta

2 chicken breasts, chopped
1 T. olive oil
2 ½ t. Emeril’s Creole Seasoning® (recipe follows)
2 links mild Italian sausage, removed from casing, chopped
½ lb. medium shrimp, peeled and deveined
¼ c. chopped green onions
1 T. garlic, minced
1 ½ c. heavy cream
¼ t. Worcestershire sauce
¼ t. hot pepper sauce (Crystal® brand)
1/3 t. salt
½ c. coarsely grated Parmesan
½ lb. fettuccine noodles, cooked
Heat olive oil in large skillet. Add chicken, sausage, and 1 t. Creole seasoning. Stir until cooked through, this takes a few minutes. Stir in green onions, garlic, cream, shrimp, and remaining Creole seasoning. Cook for 2 minutes. Stir in Worcestershire, hot pepper sauce, salt, and Parmesan cheese. Simmer for 3 minutes. Serve over noodles.
Emeril’s Creole Seasoning®
2 ½ T. Paprika 2 T. salt
2 T. garlic powder 1 T. black pepper
1 T. onion powder 1 T. cayenne pepper
1 T. dried leaf oregano 1 T. dried leaf thyme
Combine all ingredients and store in an airtight container. Makes about 2/3 cup.
