Pineapple Upside Down Cake (Geneva Hillje)

Mix in a saucepan:

1 c. crushed pineapple

1 c. brown sugar

3 tbsp. Butter

Cook together until sugar is dissolved. Pour into 9 inch cake pan.

1/2 c. shortening 1-3/4 c. sifted cake flour

1 c. sugar 1/2 c. milk

2 egg yolks 2 egg whites, stiffly beaten

1/2 tsp. salt 1 tsp vanilla

2-1/2 tsp baking powder

Cream shortening. Add sugar gradually and beat until light. Add yolk and mix thoroughly. Sift flour salt, baking powder together. Add alternately with milk. Add vanilla and carefully fold in beaten egg whites.

Pour batter over pineapple mixture. Bake 350 degrees 25 to 35 min.
